Also try these Wineskin settings
- Override Settings: Rootless (windowed)
- Virtual Desktop at: Current Resolution
- Install Options: Force normal windows
- Override Wine control of Screen Settings? Override
- Other Options: Decorate windows
and
uncheck 'Auto Detect GPU Info for Direct3D' in WineSkin/Advanced/Set Screen Options

Damned has better suggestions than I can think of at this point. I think he's thinking (ha!) that its a security issue with your computer not allowing something to be written in the location you are using. Hopefully one of his ideas solves it.

Update: Abandoned MacOS DMG file from FG Website and downloaded FGWebinstall.exe from same website. Installed Wine using Home-brew though terminal and after some mucking about with path commands and xquartz, managed to get wine to run the install.exe. Completed update and I now have a running version of FGC on desktop and I can re-size windows etc. So issue I suspect is in wine wrapper used by FG macOS DMG file, which I believe is Wineskin?
