Armor parts
How to deal with the question of defense when the character uses a hodgepodge of pieces of armor, that is, instead of buying 1 piece, he only buys different pieces, but the defense part only lets him equip one.

If you are talking about the Combat Companion's "Armor by the Piece" section, what I recommend is to make a custom suit of armor with all the corresponding modifiers (DB, Max/Min Pen, weight, etc) and specify in it's description what pieces it's made of so you can keep track.

That is definitely the best way to do it. I would just grab an item that is close and modify that instead of starting with a new item but that is only to save a bit of time.
